Steak with Cherry Brandy Marinade and Garlic-Rosemary Gravy
1/2 kg lamb chops, or beef tenderloin/rib eye, pork tenderloin or chicken thigh meat fillet
Marinade:
2 tbsp minced garlic
3 tsp dried rosemary leaves
rock salt to taste
black pepper to taste
1 tbsp Worcestershire sauce
1 tbsp soy sauce
2 tbsp cherry brandy or dark rum
2 tbsp olive oil or corn oil
Gravy:
1/3 cup water
2 tsp soy sauce
1 tsp Worcestershire sauce
1 tbsp butter
1 tsp finely chopped garlic
1/2 tsp dried rosemary leaves or 11/2 tsp coarsely chopped fresh rosemary
1 tbsp all-purpose flour
Using the back of a knife or a meat mallet, pound the steaks lightly. Marinate for 30 minutes at room temperature.
Pan grill to desired doneness. Transfer to a platter to keep warm.
To prepare the gravy, combine the water, the soy sauce and the Worcestershire sauce in a small bowl. Set aside. Melt the butter in the same frying pan used to cook the steak. Briefly saute the garlic together with the rosemary in the butter. Add the flour and mix well. Pour in the soy sauce mixture and continue to cook until the sauce thickens to the desired consistency. Strain if a smooth gravy is desired. Pour over the steaks or serve separately.
