Bandera's Barbecued Salmon
From: Chef Mitchell Wong, Bandera Restaurant
Source: News 10 Midday - June 9, 2004

MARINADE:
1 cup olive oil
1/4 cup soy sauce
1/4 cup Turbinado sugar
3 cloves garlic
SALMON:
3 salmon filets, pounded one-half inch thick
1 cup marinade

To make marinade, combine sugar and soy sauce in blender until granules are dissolved. Add garlic and slowly drizzle in oil. Set aside one-quarter cup of marinade for basting, place in refrigerator.

In a shallow pan, brush salmon with marinade on all sides. Cover and refrigerate. Marinate salmon a minimum of four hours.

When ready to cook, preheat barbecue.

Grill salmon on a well oiled grate. Baste salmon lightly with reserved marinade before serving.
