GINGER CHICKEN DUMPLINGS
1 quart chicken broth with sliced ginger and onions 8 oz. chicken breast 1 egg white 1 tsp. fresh grated ginger 1 tsp. chopped basil 1 tsp. chopped cilantro 1/2 tsp. light soy sauce salt and pepper to taste
Bring chicken stock with ginger and onion to a boil.
Puree chicken in the food processor until smooth.
Add egg white, basil, cilantro, soy sauce, salt, and pepper and blend until smooth. Form dumplings with two spoons.
Drop dumplings in stock, cook until they float. Take them out, place in a bowl.
Cool stock slightly and pour over dumplings.
