What they mean by 18% cream is that in the grocery store you can buy all kinds of cream and milk. They are all graded by the amount of milk fat in them. Skim milk has almost 0%, 2% is 2%, homo is 3.25%.... When you get into the higher levels, it is then cream. Half and half is 10%, table cream is 18% (what they are saying to use in your coffee) and whipping cream is 33%. Just look in the dairy section and you'll see what we mean. :o)
