LOW CARB FLAT BREAD (TORTILLA-LIKE)
1 beaten egg 2 tbsp pork rinds, crushed very finely 1 tbsp heavy cream 1 tbsp water 1 1/2 cups shredded cheese (your choice) (pinch garlic-pinch salt)
Mix all ingredients and let stand approx. 5 minutes to thicken.
Heat your pan without oil (use non-stick). Spoon a big dollop in pan, spread out evenly and thin, sprinkle with seasoning and brown well on both sides.
These flat breads work well for tostadas and layered enchiladas.
