Red Mesa Grill Cucumber Cream
1 lb Diced cucumber 1/3 cup Diced red onion 1/2 each De-seeded fresh jalapeno, minced 1/2 cup Fresh cilantro, chopped 1 tsp. Red wine vinegar 1/2 Lime, fresh squeezed 1 tsp. Granulated garlic 1 lb Sour cream
Reserve sour cream until the next day.
Mix together the first seven ingredients. Cover and refrigerate overnight.
Remove from refrigerator and strain excess moisture. Add the sour cream and mix well with a spoon.
