This is the recipe I came up with after tasting this fondue many times. Hope you enjoy, if you run across another please let me know. thank you.
BABIN'S FONDUE
1/4 cup chopped green onions 2 tbsp. butter 1 pound shrimp*, cleaned 1/2 cup cream or milk 1/4 cup dry sherry 1/4 cup all purpose flour 1 (4.5 oz.) can mushrooms, drained 1 tsp. minced fresh parsley 1/8 tsp. ground cayenne pepper shredded mozzarella and provolone cheese
Melt butter with onions in microwave for about 20 seconds.
Combine all other ingredients except mozzarella together with butter and onions.
Saute in a skillet on medium heat until shrimp is pink.
Pour mixture in to a baking dish top with mozzarella cheese (I also use provolone cheese) and put under oven broiler till melted.
Pour mixture into a fondue pot. Top with parsley and enjoy with garlic bread.
*You can add crawfish if you like.
