Gretchen: This recipe is quite colorful (no effense) but seems to be genuine. For me it lacks ingredients, but I am no expert in Chinese cooking. Was something like this recipe what you were looking for?
Chinese Egg Rolls Source: recipe by Dr. Carmen Liu, former owner, China Garden, Lubbock, Texas
Put about 5 teaspoons oil (More or less:the chinese way) cut 1-2 onions and put them into the hotpot to fry with oil.You need to fry the ground beef, chicken, pork, turkey or any kind of meat at your choice on the different pot before you even fry the onions with the vegetable oil or another kind of oil whatever you would prefer.
You need to cut cabbage into small pieces and fry them with the oil and onions. You can also put some water to make them soft or even cover with the lit for a few minutes so that the cabbage can become soft and cooked. (Watch out don't burn the cabbage.) When the cabbage is done, add the meat that you had alreaday cooked in other pot into the cabbage and stir them together. It does not take too long because your meat had already cooked.
Put them on the side and put into the big pot to let it cool until it's cold. Then you need the egg roll skin in order to put you cabbage with meat on top of the sheet of egg roll skin that you may perchase from the chinese food market anywhere in the United States.
You need to crack one egg in the boll and to seal the egg roll with a tiny of clear egg in order to close it and also make it smell good. You must set on the side and use the big fire (high) to fry it. It must be the special Pig (Pork-lard) oil (The white color oil)and the big fire (High Heat). It only takes less than a minute.(Watch out,Don't burn it!)
It seems very simple. Try it and I know you'll like it!
