No Bake Best Blueberry Pie with Sour Cream Topping
1 pie shell, baked and cooled FILLING: 3 cups fresh or frozen blueberries 1/3 cup sugar 1 tablespoon plus 2 teaspoons cornstarch 1/4 teaspoon salt 1/4 teaspoon ground cinnamon 2/3 cup water 1/4 cup medium sherry 2 teaspoons lemon juice SOUR CREAM TOPPING: 1 cup sour cream 2 tablespoons sugar 1 teaspoon vanilla
Spread the berries in the pie shell.
Mix sugar, cornstarch, salt and cinnamon in a 4 cup glass measure. Stir in the water.
Microwave uncovered on high stirring every minute until thickened and clear, 3 to 4 minutes.
Stir in the sherry and lemon juice. Pour over the fruit in the pie shell.
Refrigerate at least 2 hours. Serve with Sour Cream Topping.
SOUR CREAM TOPPING: Mix together, sour cream, sugar, and vanilla.
