CASA OLE CHILE CON QUESO Source: Texas Monthly From: Connie Bird; 10-17-05
Years back, this recipe was in the Houston Chronicle & was supposed to be from Casa Ole'; doesn't taste "exactly" the same, but, close. I made it several times (first with fresh jalapeno and second with the canned/pickled type). They didn't say which to use; I can't remember which tasted better. Sorry. It is thicker, too; maybe, they add jalapeno juice, too. If I were you, I'd half this recipe first time to experiment.
In a double boiler, melt: 3 cups water 5 lbs. grated American Cheese
In another saucepan: 1/4 cup water (I used more) 1 1/2 cups chopped onion 1 cup chopped celery 1 cup chopped green pepper (maybe this was supposed to be canned green chilies) (I'm going to try that next time!) 1/4 cup finely, chopped jalapeno
Saute vegetables to light boil until done (not browned).
Mix both mixtures together. Serve warm.
