THAI CHICKEN MARINADE Source: Epicurean
1/2 cup water 1/4 cup soy sauce 1/4 cup Worcestershire sauce juice and grated zest of one lime 3 cloves garlic, minced 2 tbsp fresh ginger, minced 1 tbsp sugar 1/4 tsp. red pepper flakes
Mix all together and pour over chicken breasts and let marinate at least 4 hours but overnight is better. Drain and discard marinade and grill the meat until done.

This recipe is adapted from Keo's Thai Cuisine in Honolulu. It's usually done on ribs.
1 cup canned unsweetened coconut milk 1/2 cup fresh cilantro 1/2 cup (packed) golden brown sugar 1/3 cup (packed) chopped shallots 1/4 cup soy sauce 3 tbsp chopped garlic 2 tbsp chopped peeled fresh ginger 2 stalks lemon grass, chopped 1 tsp salt
Combine the following in a food processor and soak either chicken or pork overnight. This is excellent on a grill.
