I saw that episode also. The "cookie" or base portion reminded me of a brioche recipe that doesn't rise, is flattened, cut and frozen. Then the coconut mixture is poured on top and then baked while still frozen. Please, please, if you figure this one out, let us know. They looked absolutely yummy. Besides that, her minimum order is 6 packages at $6 each. What am I going to do with $36 worth of coconut strips except eat them one right after another until I burst. Besides, that seems a bit stupid that you have to order in bulk!
