Posted wrong recipe. A friend gave me this and liked it a lot.
4 CHEESE SPINICH DIP
1 (8 ounce) package cream cheese, softened 1/4 cup freshly grated parmasan cheese (scant - not packed at all) 1 tablespoon freshly grated Romano cheese (not packed) 3/4 teaspoon garlic powder (not garlic salt) 1 rounded tablespoon very finely chopped sweet red bell pepper 1 green onion (scallion), finely chopped white and green 1/2 of a (10 ounce) package frozen chopped spinach, thawed and squeezed dry pinch of cayenne pepper 1/2 cup grated medium cheddar
Preheat oven to 400 degrees F.
Mix first cream cheese, parmesan, Romano, and garlic powder with hand or stand mixer on medium until softened and well mixed.
Add red pepper and green onion and mix on medium-low until just incorporated.
Add spinach and mix on low until just incorporated. Transfer mixture to a small ovenproof dish and sprinkling cayenne on top to taste. Top with cheddar.
Bake for 15-18 minutes or until bubbling around the edges. Remove from oven and allow to set for 5-7 minutes before serving.
Serve with fried or baked pita wedges and tortilla chips (nachos). |
