Salmon Salad - Brio Tuscan Grill Source: Buckhead's Brio Tuscan Grill From: WXIA/11ALIVE, Atlanta, Airdate: 4/13/2001 1/8 cup ofchopped parsley 4 oz salmon pinch of salt 4 oz dice tomatoes 2 quarts olive oil 1/4 cup fresh basil 5 oz mixed greens garnished w/shoe string potatoes 4 oz brown sugar 2 oz balsamic vinagrette 1 cup of balsamic vinegar 3/4 cup whole grain mustard 1/8 cup of chopped garlic 2 tbsp feta cheese
Combine the whole grain mustard, fresh basil, chopped parsley, chopped garlic and brown sugar, and vinegar in a bowl. Stir. Add the olive oil, stirring it in slowly. Sprinkle with salt and pepper
Combine the greens and tomatoes in a salad bowl. Mix in 2 oz of the vinagrette. Add the Feta cheese and salmon last.
