SPICY ORANGE CHICKEN WINGS
Servings: about 24

4 pounds chicken wings
Salt and freshly ground pepper to taste
1 (6 ounce) can frozen orange juice concentrate
6 tablespoons cold water
1/3 cup honey
1 tablespoon Louisiana hot sauce

Rinse chicken wings and pat dry well. With a sharp knife separate the drumettes from the wing tips at the joint. Sprinkle with salt and pepper.

Preheat broiler to 450 degrees F (230 degrees C).

Arrange chicken wings in a single layer on a greased baking sheet. Broil for about 4 minutes on each side, until browned and crispy. Remove from broiler and transfer wings to paper towels to drain. Place in a large serving bowl or dish with sides; keep warm.

Meanwhile, combine orange juice concentrate, water, honey and hot sauce in a small saucepan. Bring mixture to a rolling boil. Remove from heat and immediately pour mixture over the wings. Toss wings to coat well.

Serve hot or at room temperature.

Source: San Francisco Chronicle, March 4, 1992

2 tbsp vegetable oil
2 garlic cloves, peeled and chopped
1/2 onion, peeled and chopped
1 cup orange marmalade
1/2 cup Dijon-style mustard
2 tbsp Worcestershire sauce
1 tbsp dry mustard
1 tbsp brown sugar
2 tbsp cider vinegar
1/2 tsp salt
24 chicken wings, about 2 1/2 pounds

Heat the oil in a saucepan over medium heat. Add garlic and onion and saute until translucent.

Stir in marmalade and remaining ingredients except chicken wings. Reduce heat and simmer for 10 minutes, stirring often. Cool.

Put the chicken wings in a large glass or ceramic bowl. Pour the sauce over the wings, turning to make sure they are well coated. Let stand for an hour or more, turning from time to time.

Preheat oven to 350 degrees F.

Put chicken wings on a foil-lined baking sheet and bake for 20 to 30 minutes, basting occasionally with the sauce left in the bowl.

4 lbs fresh chicken wings (or frozen chicken wings, thawed)
1 cup orange juice
1/2 cup honey
1/4 cup soy sauce
1/4 cup ketchup
2 tablespoons minced garlic
1 tablespoon ground ginger
1 tablespoon hot sauce
4 green onions, chopped (garnish)

WHEN READY TO COOK:
Remove chicken from marinade, discarding marinade.

Grill wings, covered with grill lid, over medium high heat 17 to 20 minutes, turning occasionally.

Bring reserved orange juice mixture to a boil in a saucepan. Reduce heat, and simmer 25 minutes or until mixture is reduced by half.
