I went to Mazzio's for lunch today, and of course had some of the chocolate chip pizza...mmm mmm good! Anyway, I asked the manager how they make it, and this is what he told me. He said theirs ( the topping) comes like this...
9 lbs. butter (melted) 6 lbs. flour 6 lbs. sugar (and brown sugar mix)
But he also said that it is equal parts sugar and brown sugar, so I would assume 3 lbs. of each. He then said to mix until it had the consistancy of a brownie mix, thick but still spreadable. Spread on a thin pizza crust and Top with mini choco chips and bake. Maybe you can break it down and experiment. If you figure out a better, smaller version be sure and let me know, as I had also been wanting this recipe. Hope this helped a little!
