VICTORY PIG PIZZA (COPYCAT RECIPE)
FOR THE DOUGH: 3/4 cup warm water 1 pkg. dry yeast 1 pinch plus 1 tsp. sugar, divided use 2 1/2 cups flour 1 tsp. salt 4 tbsp. oil, divided use (plus more for cookie sheet) 1/2 cup warm water FOR THE TOPPING: 1 (28 oz). can whole tomatoes, drained, mashed and drained again 1 onion, chopped 8 oz Mozzarella cheese, shredded 8 oz Muenster cheese, shredded
Have ingredients at room temperature before making.
Stir warm water, yeast, and 1 pinch sugar together until dissolved and let stand a few minutes.
Add flour, 2 tablespoons of the oil, the remaining tsp. sugar, 1 tsp. salt, and 1/2 cup warm. Flour hands and knead until smooth and satiny. Let stand 20 minutes.
Oil cookie sheet, put dough on it and cover. Let rise in warm oven for 10 minutes.
Add the remaining 2 tablespoons of oil on top of dough. Place tomatoes and onions on dough. Top with Mozzarella and Munster cheeses.
Bake at 350 degrees for 30-35 minutes or until edges are brown and pull away from the sides of the pan.

VICTORY PIG STYLE PIZZA
FOR THE DOUGH: 1 cup warm water 2 pkg dry yeast 2 1/2 cups sifted flour 1 tsp sugar 1 tsp salt olive oil ( I use extra virgin) FOR THE TOPPING: 8 oz Muenster cheese, shredded or sliced (we like more cheese) 1 (1 lb) can whole tomatoes, drained 1 onion, sliced very thin salt and pepper
Dissolve yeast in warm water and set aside for a few minutes to and proof.
Add flour, sugar, and salt; knead together until smooth. It is a soft dough. Cover and let rise for 20 minutes.
Coat cookie sheet with enough of the olive oil so the dough will "fry".* The pan should be well coated on bottom and up sides. Spread dough over this...not always an easy task. (I find it's easier to stretch the dough off the pan, and finish it in the pan.) Let rise again for 10-15 minutes.
Preheat oven to 450 degrees F.
Rub top of dough lightly with more oil. Cover with half of the cheese. This is an important step...Squish the tomatoes to break them up a bit and place on top of cheese. Crushed tomatoes just don't do the job. Add onions, salt, pepper and remaining cheese.
Bake 450 degrees F for 20 minutes.
*I have found that if I put a pizza stone at the lowest level in my gas oven and use a dark jelly roll pan...it turns out great. But watch it can burn quickly. I sometimes will bake for 10 minutes at the bottom then move the pan up closer to the top if the dough is getting too dark on the bottom.
