I recently saw David Burke on FoodNetwork making those pops. I don't his chessecake recipes and I didn't watch it too closely so, I don't remember everything (but, I am sure of the things I will list below):

- Prepare and bake a cheesecake.
- Once done, gently mix with an electric mixer.
- Take Cheesecake mixture and fill a cake piping bag.
- Pipe cheesecake (about 3 spirals) onto wax paper.
- Place sticks in the pops.

Now I'm not sure if he then places them in the freezer or in the refrigerator but, I'm sure you can experiment.

Then just dip in chocolate and topping.

Hope this helped a bit, maybe someone knows more about this.
