SWEET POTATO SALAD Source: Cafe Tu Tu Tango
2 cups medium diced sweet potatoes 1/2 cup raisins 1/2 cup mayonnaise 2/3 cup finely diced red onion 1/3 cup finely diced celery 1 tablespoon finely chopped parsley 2 teaspoons fresh grated ginger
Cook potatoes until they are fork tender in boiling water. Drain the potatoes and cool them completely.
Soak the raisins in hot water for 15 minutes and then drain.
Combine all the ingredients and mix them thoroughly, but gently.
Chill for 24 hours before serving.
Yield: 6 servings
