I take it you're talking about real egg rolls not lasagna roll-ups (which I also saw called "egg rolls." :)
Couldn't find Win Dixie's recipe on the Internet. Here is a recipe to experiment with. Good luck! Please share your results with us.
SPINACH EGG ROLLS Source: Michigan Country Lines, July/August 2007 v.27.#8 From: Barbara Skorna
1 lb. ground chuck 3 cans of spinach 2 cans mushrooms 2 8-oz pkg. Monterey jack cheese 1 8-oz pkg. sharp chedder cheese 2 pkg. egg roll wraps dash of salt to taste
Brown hamburger; drain well; set aside.
Drain liquid from spinach and mushrooms; set aside.
Shred your cheeses and mix together.
In a large bowl, combine hamburger, spinach, cheeses, mushrooms and salt to taste.
Put a tablespoon of filling on each egg roll wrap following the directions on the package for filling placement and wrapping instructions.
Deep fry in hot oil until golden brown; drain and serve.
If you don’t like spinach, you will like these.
