Recipe: Mandarin Orange Cream Cake (Cheesecake) (re: Applebee's Creamsicle Cake)

MANDARIN ORANGE CREAM CAKE

GRAHAM CRACKER CRUST:
1/2 cups graham cracker crumbs
1/4 cup granulated sugar
5 tablespoons melted butter

Blend together and press on bottom of square pan.

CHEESE CAKE:
1 (8 ounce) package cream cheese, at room temperature
1/2 cup sour cream, room temperature
1/4 cup granulated sugar
2 eggs

Whip up the cream cheese until very light; add sour cream. Sprinkle the sugar on top while whipping creams together. Add eggs and whip to combine. Spread on top of crust.

Bake 15-20 minutes or until cheesecake is done. Set aside to cool down.

JELL-O MANDARIN ORANGE TOPPING:
2 boxes orange flavor Jell-O
3 tablespoons sugar
2 cups hot water
1/2 cup mandarin orange puree
pieces of pound cake
pieces of mandarin oranges

Dissolve Jell-O and sugar in 2 cups hot water. Then add mandarin orange puree. Pour over cheese cake. Put in refrigerator to cool down. Before the Jell-O starts to set, press pieces of pound cake and pieces of mandarin oranges into the Jell-O. Leave some pieces
sticking out of the Jell-O. Chill Jell-O until set.

ORANGE CREAM:
1 (8 ounce) package cream cheese, softened
2 cups mandarin orange puree
2 cups heavy (whipping) cream

Blend cream cheese until very light and fluffy. Add mandarin orange puree and heavy cream. Whip up. Spread on set Jello. Place in refrigerator to chill.

WHIPPED CREAM TOPPING:
1 cup heavy (whipping) cream
1/4 cup sugar
1/2 teaspoon vanilla

Whip 1heavy cream with sugar and vanilla just until soft peaks form. Spread over orange cream.
