BICKFORD'S GERMAN APPLE PANCAKE

1/2 cup flour
1/2 cup milk, (half cream and milk work better.)
2 eggs
1 large or 2 medium size apples or one large can of apples
2 tablespoons butter
1 to 2 tablespoons granulated sugar
1 to 2 tablespoons of light brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla
1/4 teaspoon salt (more or less)

Preheat oven to 400 degrees F.

Mix sugar and cinnamon together. If you mix more than needed keeps well in a small jar.

Peel and precut the apples or use canned well drained apples.

Mix milk and eggs together with a whisk. Add the flour and whisk together until smooth.

Preheat pan in oven. (Important step)

After preheating pan, remove the pan from the oven and set the pan on a medium burner. (this keeps the pan from cooling down). Spray a little olive oil in the pan to keep the butter from burning.

Melt butter in cast iron skillet (this is essential). Quickly Remove from heat. Pour the mixture into the hot skillet. The pan should sizzle a little. (to develop flavor). Place apples on top of mixture. Sprinkle generously with cinnamon and sugar mixture.

Bake 20 minutes for single recipe pancake. For a double recipe bake pancake for 30 minutes, in 400 degree F degree oven.

Serve from cast iron skillet or heavy metal frying pan.
(I used heavy stainless steel frying pan)

Melt butter on top and serve.
