This is a starting point that I have used to come close to the Panera recipe - I think. I tend to like a lot more vinegar in my dressings than most, so it will need adjustment to suit individual tastes.

2 parts honey
3 parts seasoned chinese rice vinegar
1 part neutral oil
Chinese (brown,toasted) sesame oil - start with a few drops depending on how much you're making, and adjust as needed

Mix well and adjust to taste. This works pretty well for me as is, but you might want to adjust proportions, and add salt, pepper, herbs/spices. This haves the clean taste of the Panera dressing.
