Driving past Jason's Deli today I was craving some gingerbread muffins. I decided to stop at the grocery store where I picked up a Gingerbread mix--Betty Crocker, I think. It was the only brand on the shelf.

I made it according to directions and used a mini-muffin pan, non-stick. First batch was too fluffy so I stirred in about 1/4 cup Grandma's Molasses ('unsulphured, mild'). The next batch was better but it needed more molasses. I continued to add molasses for each of the 4 batches. Of course, by then, the muffins were not very dense but the flavor was very close to Jason's--chewy crusty outside, deep rich and moist inside.

Next time, I will substitute molasses for all the water called for on the directions. I think it will be very close to the real thing. If you're adventurous, give it a try.
