I made a half recipe of this for a small dinner party and got rave reviews, I love earls clam chowder and this is it to a T. Only difficulty was finding clam base. Substituted one can of clams pureed with 2 tsp lemon juice and 1/2 tsp salt. Also recipe calls for cans of clams but doesn't tell size. I used 400 ml cans and for a half recipe I used 4 cans (plus the clam base.) Next time I make this I will probably use 6 cans plus the base, but I love lots of clams. Only problem is getting rid of the stuff only keeps for three days in fridge and won't freeze well. |
