Start with cooked chicken breast. I like to buy them already roasted at the grocery store.
Chop the chicken breast, add pineapple, a little coconut, a spoon of your favorite mayonaise and a spoon of lowfat vanilla yogurt. Mix it well and chill. Serve on whole wheat bread, dressed as you like. You can't go wrong!
