MOM'S FINNEY'S POTATO SALAD

5 lb. potatoes (we use red)
1 quart mayonnaise
2 tbsp yellow mustard
1 small jar chopped pimento
1 small onion, chopped
1 bell pepper, chopped

Boil WHOLE potatoes until tender. WHILE THEY ARE HOT (Important), remove skins. Add remaining ingredients & mash until well blended. Add S&P to taste.

Because it is mixed while hot, this potato salad is extremely creamy. May be served hot or cold.

This is as close as you'll get to Finney's. My mom is asked to bring it everywhere!
