When I lived near Montgomery,AL, my family and I enjoyed eating at Jim & Nick's. Like many others, I fell in LOVE with the cheese biscuits. I was excited to get this recipe when we still lived there. I really like this recipe and continue to make them. This is more of a muffin recipe than a biscuit recipe and the difference in the texture from the restaurant's version isn't enough for me to not make them. J & N's biscuits are more sweet than cheesy (according to my taste buds), so the sweetness is also a plus. If the sweetness is too much, adjusting the ingredients might help (as some have done here). You can look at it as having a starting point to create your own recipe for the muffins. While it can be difficult to hit the nail on the head when trying to re-create a recipe, this one seems close enough for those who can't get enough when I make them.
