Laura, I think they do use ricotta, it's just very processed to make it smoother. Go ahead and ask if there's ricotta in it - I'll bet they'd tell you. Maybe they mix it with mascarpone. I agree that they make wonderful cannoli, it's well worth the trip. But I'm pretty sure it's at least partly ricotta.
