Slice peeled sweet onion from the center out, like a flower blossom, soak in ice cold water; drain well.

Dust with all purpose flour well, shake off excess flour.

Dip the blossom in an egg mixture made with, 2 eggs, 1/3 cup milk, salt, and 1/2 tsp. cayenne pepper. Coat with flour again, making sure to coat well!!

Have a deep fryer filled with enough vegetable to cover the onion at least by 1/2 inch. Make sure the oil is hot enough so that when you GENTLY lower the onion in with a slotted spoon it fries immediately. Approximately 10 minutes. Drain well on paper towels.
