so i worked for pf changs and i know how they do it. all of the ingredients listed in
the other posting with the complete listing are put in a large wok with the spareribs, which have already been cut into individual pieces. They are then braised until tender and soft (not quite falling off the bone, but quite close). They are then cooled before service. When served, they are deep fried for a minute to reheat and crisp, then tossed with the also aforementioned
5 spice salt mixture.
