Ive gotten a recipe for Chicos Tacos from a person in El Paso when I lived there, He used to work there.
Red Sauce: 4 tomatoes 1 large onion 1 clove garlic 1 chicken bullion cube Oregano Salt Sugar
Tacos: 1/2 and 1/2 mix corned beef Tortillas Oil to fry
Boil the 4 tomatoes and half the onion in 2 quarts of water w bullion cube till onions are soft and translucent.
Place in food processor and puree till smooth. Use tomato water to thin. Add reserved half of onion, oregano , salt and sugar. Use tomato water to get desires consistency.
Fry tortillas in hot oil just till soft 3-4 seconds a side.
Brown meat and add 1 tsp meat to tortilla and roll. Fry till crisp.
Add cheese and sauce and Voila!
