Hi Beth. First of all, congrats on being on your own. It's a great thing to do for yourself as an adult.
When I first lived alone, I learned that pasta was an easy thing to make and there was usually enough leftover for the next day. Cook 1/4 of the package of pasta if it's spaghetti or linguini etc.(1 LB. bag or box) or 1 C. of loose pasta like shells, penne etc. Just follow package instructions for that. Then, microwave a 10 oz. package of frozen, chopped spinach. While that's all going on, chop up 1 or 2 cloves of garlic (depending on how much you'd like) and cook it over low heat in 3 T. of olive oil in a saucepan. Be careful not to burn it, garlic cooks very, very fast!
Add the spinach to the garlic and olive oil. If it gets dry, add a little more olive oil or chicken broth.
When pasta is cooked, drain it, put it back in the pasta pot and stir in the spinach. Top with grated Parmesan or Pecorino Romano.
You can easily find all these things in the supermarket, wherever it is that you live. Put on your favorite music, cook and be proud of yourself.
