If you are looking for a simple holiday dinner, start with roast turkey breast or a small baked ham. With either one, just throw it into the oven and forget for however long the label says.
Steam your favorite green veggie. Mash a couple potatoes. For dessert, store bought pumpkin or apple pie with vanilla ice cream. Brown 'n' serve rolls.
