Carrot Cake

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 C Sugar 2/3 C Oil 2 Eggs 1 C Unsifted Flour 1 Tsp Baking Soda 1 Tsp Ground Cinnamon 1/2 Tsp Salt 1 1/2 C Carrots(About 1 1/2) -- Grated 1/2 C Chopped Nuts
Mix together sugar, oil, and eggs; stirring until well blended and sugar is dissolved. Mix together flour, soda, cinnamon and salat; then gradually add to sugar mixture, stirring until thoroughly blended. Fold in carrots and nuts. Pour into greased 1 1/2 qt. baking dish. Bake 350 for about 30 min. Cool and frost with cream cheese frosting.
