I have a friend who does not use alcohol at all.
Whenever a recipe calls for white wine, she
uses 7-Up or some other kind of clear pop. It
seems to work. The alcohol cooks off, anyway,
or most of it, so it is really the sugar and
taste that you are going for. Try it and see.
