My "two cents" for you is to consider what kind of food you prefer to eat/cook, watch the sales at the grocery store and buy accordingly, and take a day every week or two to cook some stuff for the freezer. I buy my favorite pieces of chicken/pork/fish and freeze them in individual portions in baggies to cook on a daily basis, and also buy larger beef/pork/chicken pieces to use for larger dishes that I freeze after making larger batches.

For the "make ahead" ideas: A small chicken can be roasted in 1-1/4 hours and made into 3-4 meals: the first meal of freshly roasted chicken; the second and third meal of perhaps chicken salad or chicken enchiladas; and the last meal(s) made into a soup with the carcass. A batch of chili, lasagna, pot roast, etc., can also be frozen in individual servings after you cook them (search here at this site for recipes, if you need them).

I also like to use eggs for dinner. A simple omelette or frittata is easy, healthy and tasty. Pasta and rice also work great - add your favorite leftovers to a pan of sizzling onions and garlic, and you can make anything into a fabulous meal and toss over the rice/pasta of your choice.
