Ground Beef Mix Makes 4 Servings
2 eggs 1/4 cup Ketchup 1/4 cup water 1/2 cup minced onion 1 tbls Worchestershire sauce 1 tsp salt 1 cup soft breadcrumbs, lightly packed (pull bread apart with a fork to make) 1 lb lean ground beef
Beat eggs in a large bow. Blend in ketchup, water, minced onion, Worchestershire sauce and salt. Mix in soft bread crumbs. With a fork, mix ground beef with other ingredients. Divide into 4 single-serving portions. Place portions in plastic bags or containers and freeze. Thaw or defrost in microwave to use in following recipes. ================ Individual Meat Loaf Makes One Serving
1 portion ground beef mix, see above 2 tlbs ketchup 1 tsp brown sugar 1/2 tsp mustard
Preheat oven to 350F. Blend ketchup, brown sugar and mustard into a sauce. Shape ground beef mix into a small loaf. Place on a small shallow baking dish and cover with sauce. Bake about 30 min.
To freeze loaf before baking, wrap in foil without sauce.
============================ Stuffed Peppers Makes One Serving
1 portion ground beef mix, see above water 1 large green pepper 1/4 cup tomato-based sauce such as spaghetti sauce, marinara sauce, tomato sauce, diluted ketchup, chili sauce or tomato paste.
Preheat oven to 350 F. Trim a small slice from bottom of pepper if needed so pepper sits level. Cut top from pepper and remove all seeds and white membranes. In a small saucepan, cook green pepper 5 minutes in simmering water to cover. Drain and fill green pepper with ground beef mix. Place in a 10 oz custard cup or pot pie pan. Pour sauce over. Bake 40 minutes.
To freeze before baking, cool green pepper and fill. Place in foil pan, add sauce and wrap in foil.
=============== Meatballs Makes One Serving
1 portion ground beef mix, see above
Preheat oven to 400 F. Shape ground beef mix into 1-inch meatballs. Arrange on a shallow baking sheet and bake 15 minutes. To freeze cooked meatballs, place in plastic bag and squeeze air out.
---------------------------- Spaghetti and Meatballs Makes One Serving
Cook 4 oz spaghetti. Use package directions. Drain. Heat meatballs in 1 cup spaghetti sauce. Add sliced mushroom and minced garlic if desired. Pour over spaghetti.
-------------------- Barbecue Meatballs Makes One Serving
Heat meatballs in your favorite barbecue sauce, about 3/4 cup or so. Pour over steamed rice, see below.
================================ Steamed Rice Makes One Serving
1 cup water 1/2 cup uncooked long grain rice
Place water and rice in small saucepan. Bring to boil. Reduce heat to a very low simmer. Cover tightly; cook 15 minutes. Do not lift lid during cooking. It can't steam without the steam. Remove from heat and let sit 5 or 10 minutes longer. Fluff with fork.
