Here's a great way to use leftover meat.
Fried Rice Makes One Serving
1/2 cup steamed rice, see below 1 tlbs olive oil 1 tsp soy sauce 1 green onion, sliced 1 egg 1/4 cup (more or less) minced cooked meats such as beef, ham, chicken, bacon, sausage or shrimp
Heat oil in an 8-inch skillet. Add steamed rice. Stir-fry until rice is hot and mixed with oil. Add soy sauce; mix well; stir in green onion. Push rice to side of skillet. Break egg into skillet and quickly scramble with a fork. As egg sets, stir gently to let uncooked egg flow underneath. Stir cooked egg into rice, breaking egg into small pieces. Stir in minced cooked meats. Heat through.

1 cup water 1/2 cup uncooked long grain rice
Place water and rice in small saucepan. Bring to boil. Reduce heat to a very low simmer. Cover tightly; cook 15 minutes. Do not lift lid during cooking. It can't steam without the steam. Remove from heat and let sit 5 or 10 minutes longer. Fluff with fork.
