Chicken with Honey Mustard Sauce for One From: Jacob Shaurette Newsgroup: rec.food.cooking Date: 3-27-97 I found this recipe in the newspaper. It is really good served with broccoli and rice. Makes One Serving 3 tablespoons flour 1 teaspoon seasoned salt 1 6 ounce boneless, skinless chicken breasts 2 tablespoons olive oil 1/2 cup chicken broth 1 teaspoon whole grain mustard 1 tablespoon honey 1 teaspoon cornstarch salt and pepper, to taste Preheat oven to 350 degrees. Mix flour and seasoned salt together. Dredge chicken in the flour mixture and saute in oil over medium heat, browning both sides. Cover and bake 35 minutes.
Bring chicken broth to a simmer, add mustard and honey. combine cornstarch with water and stir into broth mixture. Add salt and pepper to taste. Serve over chicken breast.
