Alex, here's another one that sounds good. I haven't tried it yet--it's on the back of a 6 oz. Martha White Buttermilk Cornbread mix bag. I imagine you could use any mix that makes 6-8 muffins. It serves 4 to 6, but it appears easy to cut in half--just make muffins with the other half of the batter.

Tamale Pie

2 (15-oz.) cans chili or 4 cups homemade chili
2 oz. (1/2 cup) shredded Cheddar cheese
1 (6 oz.) pkg. cornbread mix, prepared according to directions

Heat oven to 375 degrees. Pour chili into 8-inch square baking dish (for half a recipe, you could use a loaf pan); sprinkle with cheese. Pour cornbread mix over cheese. Bake at 375 for 30 min. or until golden brown. 4-6 servings.
