Here's a few things that I usually cook for two that would easily be done for one. I buy my meat at a meat market so I can specify how much at a time but you can easily split up store bought meat as well:
BBQ Chix Pizza
Buy premade pizza crusts, use BBQ sauce as the base w/ 1/2 c. diced cooked chicken breasts, depending upon the size of the crusts you use (I sometimes buy the small ones for one person). Top w/ chopped green onions and mozzarella for a new kind of pizza.
Marinated Chicken
I marinate chicken breasts in pineapple juice, italian dressing, worcestershire and soy sauce overnight for an awesome grilled chicken dinner. I've made a few at a time and reheated them and have had great results as well. Very tender after reheating.
Italian Shrimp
Check out my recipe that I posted that I had for dinner tonight...that was very delicious and easily done for just me buying frozen, peeled and deveined shrimp from my local Wal-Mart supercenter.
Chicken Parmesan
A lot of times if it's just me, I buy frozen breaded chicken patties, heat them up with some mozzarella cheese on top and serve over vemicelli w/ spaghetti sauce for a quick chicken parm.
Hamburger Gravy 1 can cream of mushroom soup 1/4 c. chopped onion 1 lb. ground chuck 1/2-1 can beef broth (depending on cook time)
Combine all ingredients and serve over mashed potatoes. If you buy the instant kind, you can make exactly the amount you need for one person and save the rest for another time.

It's easy to make things and freeze them, don't be afraid of how they'll freeze. Most things that don't have a cream base freeze beautifully. Make a 1/2 lasagna and freeze some..manicotti, stuffed shells, etc.
Local meat markets are the ticket and aren't, in my opinion, any more expensive than the grocery stores and are better quality... buy one filet to grill, one pork chop to shake and bake...anything, just make sure you eat well!
