Kelly, here are two that I have used often. Wishing you the best for your husband's safe return.

Zesty Beef Bake

1/4 lb. ground beef
1 small zucchini cut in 1/4-inch slices
1 small onion, thinly sliced
Salt and Pepper to taste

Place all ingredients in medium fry pan.

Cook and stir over medium heat till beef is brown and vegetables are tender-crisp. Drain.

Spoon mixture into individual casserole or pie plate 6 X 1 inch.

Spread Zesty Sauce over beef mixture.

Bake uncovered at 450 degrees till sauce is bubbly and golden brown, 10 - 12 minutes.

Zesty Sauce

2 tbsp. dairy sour cream
2 tbsp. mayonnaise or salad dressing
1 tsp. prepared mustard
1/8 tsp. chili powder
Dash of ground cinnamon

Mix all ingredients well together. Spread over beef mixture above.

Ground Beef Pasty

1/4 lb. ground beef, crumbled (very lean)
1/4 cup potato, chopped
1/4 cup carrot, chopped
2 tbsp. onion, chopped
Salt and pepper to taste.
Milk
Chili sauce

For pastry I use the convenience of the pre-made pastry that you unfold.

Warm pastry to room temp. and unfold onto ungreased cookie sheet.

Place beef, potato, carrot and onion on half of the circle to within 1-inch of edge; sprinkle with salt and pepper.

Brush edge of pastry with water.

Fold pastry over filling; fold bottom edge of pastry over top edge of pastry. Seal and flute.

Make slits in top of pastry to allow steam to escape. Brush top with milk.

Bake at 350 degrees till golden brown, about 1 hour.

Serve with chili sauce.
