Ham and Cheese Omelet in a Mug (microwave)
For a great grab-and-go breakfast sandwich, whisk one egg with a splash of milk and a little salt and pepper. Stir in a little grated cheddar cheese and a handful of diced ham.
Coat the inside of a coffee mug with cooking spray, add the egg mixture and microwave on full power, stirring once or twice, until almost set, about 1 to 1 1⁄2 minutes.
Give it about a minute to set and then turn your instant omelet out onto a toasted English muffin and you’re ready to go!
