I buy one of those already cooked chickens. One night I make mashed potatoes, corn and gravy (packet) and use about half of the chicken. The other half of the chicken I chop up and make either fajitas with bell peppers and mushrooms or cheesy chicken quesadillas. You can also use the whole carcass and make great chicken stock by adding celery, parsnips etc.
Ground beef can go a long way. Buy a larger amount, split it and freeze it. You can make easy pasta by adding a bottled sauce and mushrooms or meatloaf using BBQ sauce. Yum!
If you don't already do this - buy fresh produce at a Chinese market. You'll be amazed at how much you get for less than a grocery store. It may feel like it's out of your way but it's worth it. Hope this helps. |
