Hey Bruce,

I saw your other post about brining turkey. SOunds like you are really getting into (or are into) smoking.

I also have the New Braunfels black Diamond and have had excellent results with it. There are a couple simple, cheap modifications I would recommend, but first, try it the way it is and get used to it.

The Black Diamond can be tricky to use. You have to be patient and you have to learn your smoker. I'd suggest doing something quick for your first time, such as spare ribs.

The way I do mine, is first rub them with plain yellow mustard, then sprinkel them with seasoning (called a rub). Let them sit in the fridge overnight and then smoke them at 275 for 4 to 6 hours. I like using oak, cherry or hickory for smoke.
