Doing tinfoil grilling is a great thing to do also. You can put whatever you want to cook in heavy duty tinfoil before leaving home and just throw the packets on the grill. If desired, you can freeze the packets which will help them stay cold. I do one with hamburger and sliced onions. Also chicken with lemon.
