Hi Judy: It is a bunch of work, you do need to talk people (the kids) into turning the spit. The one we had was a 30 pound pig (about), dressed. Ordered it 2 weeks before at a pork store near us; it helps if you know if there are German people living around you, they do usually open up a pork store. I went to a Rental Center Store (where you can rent beds, tables & chairs, etc.) and asked if they had a grill like a trough with a motor on the end. They did and I rented it. EARLY the morning of the party (make it 3 or 4 o'clock) have hubby put the pig on the spit AND have him put chicken wire around it tight so it is not loose on the spit, it will flop when turned if its not done right; I filled the pig with oranges and lemons cut in chunks and sewed up the cavity with a skewer (wooden or otherwise), I did salt & pepper and garlic powedered the inside of the pig too. I "chose" the pit turners and they would do about 1/2 hour each all day. Hubby was in charge of putting the charcoal briquettes in the grill trough when they burned low. It took all day to cook the pig and it did get burnt on one side until we got the chicken wire on right. It all tasted good, even the burnt part. This was when I found out that a pig is like a chicken - it has light and dark meat also and the dark meat is juicier and more tender. The people who came to the party brought a dish of their choice with them. I had the liquid refreshments to do only. It was quite a mixture. It was FUN, especially when one of the kids said "it has blue eyes and it's looking at me!" I did put the praverbial apple in its mouth when I served it - no one ate that.
