My family and almost all of my friends, enjoy these:
Cut boneless pork into one inch cubes. Place in glass bowl. Pour olive oil (enough to very lightly coat the pork) and lemon juice (I usually like lots - probably enough so you can see it coming up the side but not covering). Sprinkle with fresh cracked pepper and lots of oregano. Marinate overnight and then skewer. Barbeque and enjoy. My husband does the cooking and usually used the leftover marine to keep the kabobs moist. He also likes to sprinkle additional oregano over them. I usually serve with Greek Salad and steamed rice. These are so easy and people think you have spent hours preparing them.
