Nancy, I thought I would dive in as you have not had other responses, hope you are still looking!

We tend to grill a lot when camping. I take along my own grill rack. My all time faves are very simple, baked potatoes and onions done in the fire are absolutely delicious. The potatoes I just salt, wrap in 3 layers of foil and put them at the edge of the coals, turning them every 10 - 15 minutes. The onions I usually halve, add a small dab of butter, salt and pepper and then to the fire for 30 - 40 minutes, also turning regularly.

Camping last week I took along some coleslaw that I knew would keep. Also pre-made and froze burgers, but ate them the second day, they won't keep too long.

All simple stuff that just tastes better cooked outdoors! Enjoy your trip.
